This one is a reader request - and I was shocked to discover I haven't already created a waffle stitch tutorial! Note that there are a few different varieties and twists on this stitch out there, but I'd call this one the most basic. Special stitches are linked in the written pattern, shown below the video.
Note that this version uses a multiple of 3, plus 2 for the turning chain. Some varieties of the Waffle Stitch have one more "background" st between the grid-making post stitches - so that version would use a multiple of 4, plus 2 for the turning chain. There may also be different treatment of the stitches at the end, or other changes - and they're all great!

Basic Waffle Stitch Instructions
Row 1 (WS): Ch any mult of 3 + 2, skip the 3 chs closest to the hook (counts as first dc), dc in each rem ch across; turn.
Alternative Row 1: FDC any mult of 3.
Row 2 (RS): Ch 2 (counts as first dc for rem of pattern), *fpdc in next st, dc in next 2 sts, rep from * until 2 sts rem; fpdc in next st, dc in last st; turn.
Row 3: Ch 2, *dc in next st, fpdc in next 2 sts, rep from *until 2 sts rem, dc in last 2 sts; turn.
To continue, rep rows 2 and 3 to desired length.
