Hi Renee! I think a fun and easy pattern that can teach a lot is the Artfully Simple Infinity Scarf. It has a video tutorial too! But another good idea is to go to Ravelry.com and do a pattern search. You can use lots of search filters, including one that sorts by difficulty as rated by other crocheters!
